Appetizer
8 ounces mozzarella
1 cup packed fresh basil leaves
1/2 cup sun dried tomatoes packed in oil drained cut in thin strips
1 1/4 cup extra virgin olive oil
Cut mozzarella into thin slices. In glass bowl, layer slices with basil & sun dried tomatoes . Cover with olive oil. Marinate, covered and chilled, 2 - 3 days. Remove cheese, basil & tomatoes from oil. Serve at room temperature with fresh tomatoes & bread. Reuse oil to marinate more cheese, or in dressings.
